PASG HAPUS!! 🥂 🐣 (Happy Easter!! 🏴󠁧󠁢󠁷󠁬󠁳󠁿) Popping a couple of corks to celebrate a cracking Easter weekend with two brand new additions to the Chilled & Tannin website - the latest releases from @ancrehill in Monmouthshire, their Blanc de Blancs and Blanc de Noirs 👌🏼 These are two of the most hotly anticipated Welsh wine releases of the year - coming from the sun soaked 2018 vintage and having undergone super long maturation and lees ageing before release. To make this remarkable, traditional ‘champagne method’ sparkling wine, 100% biodynamically grown grapes from their estate are handpicked and added to the press in whole bunches with only free run juices used, before undergoing wild fermentation with no SO2 inoculation. After 15 months maturation the wines are blended and bottled with no filtering or fining and then undergoe a stonking 4 years and 9 months of ageing on the lees before disgorging. The team then add a zero sugar dosage ready for the second fermentation in the bottle - resulting in two brut nature style wines packed with oodles of depth of character and finesse. The Ancre Hill team comprise of husband and wife Richard and Joy and resident South African winemaker Jean du Plessis (@jeandoep) - and they proudly follow a regenerative philosophy in the vineyard and a low intervention approach in the winery (which is so sustainable it’s even built out of hay bales!) Almonds. ‘Casca Macération de Soif’ is made from 100% Sauvignon Blanc, fermented with extended skin contact and aged for around one year on its fine lees, producing a uniquely aromatic and textured wine. Domaine Joël Delaunay is a strictly sustainable family-owned estate in the Touraine AOC, currently run by fifth-generation owner Thierry Delaunay. Like his forward-thinking father Joël Delaunay, who insisted on estate bottling in 1970, Thierry is similarly pioneering and was the first Touraine producer to bottle under screwcap in 2004. This wine is deep orange-hued in colour and reveals bold aromas of dried mandarin zest, honey and almonds. The palate is clean and fragrant with orange peel and honeysuckle notes coming to the forefront, backed up by a grippy texture. Dandelion Vineyards is a unique fusion of vine and vignerons. Their wines represent decades of experience, bending the fruit from their heirloom vineyards, with the finest traditions of artisan winemaking. Dandelion Vineyards are proven plantings that have stood the test of time and their wish is to nurture the unique character of these vineyards and express their terroir. In their sustainable vineyards they encourage the humble dandelion to thrive, suppressing other weeds in the Winter and providing mulch during the growing season. And this “Lionheart of the Barossa” Shiraz  is named after the region’s famous godfather of old vines, Carl Lindner. The wine comes from some of those gnarled ancient vines, some of which are over a century old - and grow in what are considered to be some of the oldest soils on Planet Earth. The wine is 100% Shiraz which was hand harvested, then gently crushed and naturally fermented in open vessels for eight days, before careful basket pressing into some new but predominantly older french Oak Barriques to finish fermentation. After 18 months of maturation and a racking in the same oak, the wine is bottled our minimal intervebtion, to capture the essence and purity of Carl’s vines.
