We’re delighted to present the first-ever release from St Hilary Vineyard where Liz and Peter Loch are committed to low intervention winemaking, following organic practices in the vineyard and working with Mountain People winery in Tintern to vinify, advise and bottle their wines.
The Vale of Glamorgan is rich in history - something that's apparent from the array of castle ruins - and the rolling green hills between St Hilary and the nearby Bristol Channel have evidence of Roman settlements and a historic medieval Monastery at Llancarfen, both of which suggest that growing grapes has been a local pursuit for at least a millenia.
And the modern climate now suits quailty wine growing with three vineyards (including Chilled & Tannin's own vines) all situation a stone's throw from one another in this sunny corner of Wales.
The St Hilary team have planted the three classic Champagne grapes of Chardonnay, Pinot Noir and Pinot Meunier and this first release is a fabulous fruit forward still rosé wine made using the two red varieities.
