Nebbiolo has a reputation for being serious business — but this Adelaide Hills take on the famous Italian grape is all about elegance, freshness and pure drinkability. Perfumed, savoury and wonderfully energetic, it’s the sort of red that quietly disappears far quicker than expected.

Protero is the project of Stephen and Fiona Pannell, focusing on Italian-inspired wines from cool-climate South Australian vineyards. The Nebbiolo comes from the Adelaide Hills, where cooler temperatures help preserve the grape’s trademark perfume and acidity whilst allowing the tannins to ripen beautifully.

The 2022 vintage was fermented with a portion of whole bunches to build aromatic lift and texture before ageing in older oak barrels, allowing the delicate fruit and floral character to stay front and centre rather than being buried beneath heavy oak.

There’s loads of classic Nebbiolo character here — rose petals, red cherry, orange peel and earthy spice — but wrapped in a softer, more approachable Adelaide Hills style. The tannins are beautifully fine and savoury, giving structure without becoming hard work, whilst the bright acidity keeps everything lifted and incredibly food friendly.

This absolutely sings with mushroom risotto, slow-cooked ragù, charcuterie or anything involving parmesan and good company.
