Ain't nothing like the heel thing

Tastes like: Plum pudding. Black cherry. Summer Fruit. Spice. Toast. Dried herbs. Chocolate.

This intense wine comes from the sun-baked 'heel' of Italy and its irresistibly complex character comes from a curious process called 'Il giro del Picciolo'. This involves waiting for the grapes reach full maturity and then twisting the stalk of each bunch to cut off the supply of water and nutrients.

Over the next 12 days in the sun the grapes will lose around 25% of their water, concentrating their flavours and resulting in a brazen and powerful wine.

25% of the wine is aged for 12 months in French and American barriques to add more toastiness and matured flavors.

Produced under the meticulous direction of respected winemaker Stefano Chioccioli with a philosophy striving to be ever more sustainable.
