Hare Today, Gone Tomorrow

Tastes Like: Ripe Apple. Wild Flowers. Fresh Bread Crust. Citrus Zest. Gentle Spice. Creamy Texture.

Pinot Bianco with a little more going on. Fresh and elegant, but with enough richness and texture to keep things interesting, this is northern Italian white wine that’s happy to step outside the usual citrus-and-crisp routine. Think orchard fruit, delicate florals and a lovely savoury edge. Quietly confident stuff.

Made by Franz Haas in Alto Adige, northern Italy, Lepus takes its name from the Latin word for hare, which features on the Haas family crest. The Pinot Bianco grapes come from three hillside vineyard sites around Montagna, sitting between 400 and 800 metres above sea level. South- and south-west-facing slopes, with soils ranging from light sands to porphyry-rich ground, give the wine plenty of character.

The 2024 vintage is made from 100% Pinot Bianco. Most of the must ferments in temperature-controlled stainless-steel tanks, while a portion goes into small oak barrels. The wine then spends around five months ageing on its lees, building a little extra body and complexity without losing its freshness.

In the glass, expect ripe apple, wild flowers and fresh bread crust, backed up by balanced acidity and a rounded, gently spicy richness. It’s elegant without being lightweight, with a long finish that makes every sip worth slowing down for.

Pour it alongside roast chicken, creamy mushroom pasta, grilled fish or a risotto that deserves a decent bottle. It’ll also happily take on lightly spiced Asian dishes — a versatile little beauty.
