A wine to snap up while our allocation lasts, Big Salt is - according to the crafty winemakers at OVUM - a bottle that encapsulates the wild Oregon coast, from salty kisses to the breezy Pacific spritz in the air.
For us it's a masterfully made wine which showcases the best characteristics of some of our favourite grapes.
OVUM hand pick grapes from 10 unique organic and sustainable Oregon sites at opulent ripeness levels for complexity and character.
It's a combination of 50% Riesling, 30% Gewurztraminer, 14% Early Muscat, 3% Sauvignon Blanc and 3% other grapes... but what make this wine super special is that OVUM co-ferment the fruit, starting with the Gewurztraminer and then adding the other grapes when they reach optimum ripeness.
Extra kudos to this producer who has the upmost respect for Mother Nature from the soil and vines to letting the winemaking go with the flow of nature with minimum interference including wild fermentation and
