Shake It To Awake It

Tastes like: Citrus. Elderflower. Passionfruit. Subtly Toasty. Spritzy.

Welsh wine is a bit of a David and Goliath story with the nation’s pioneering winemakers and unique vineyard plots creating wines that punch well above their weight and which are now gaining global acclaim. 

And this smashing sparkling wine is a case in point for the forward thinking and exciting wines coming out of Wales.

Clidda Gawr is named after a local legend, a giant who was said to live nearby to the vineyard, in his fortress upon Clytha Hill.

It’s made using the Col Fondo methods where the wine has gone through secondary fermentation in bottle without filtration giving it a cloudy, subtle spritz. This technique is also known as the ancestral method or Pet Nat (which is sooo hot right now).

The wine is a blend of aromatic white varietals Schonberger, Reichensteiner, Phoenix grapes giving it fresh characteristics of elderflower, orchard fruit and passionfruit. 

The Dell’s Lucy and Dan suggest to either pop the crown cap and imbibe once the cloudy sediment has settled in the bottle or to “wake the giant” by giving a gentle shake to distribute the sediment for extra toasty-brioche depth.
