The vines grow on a chalky limestone plateau, where cooling sea breezes help preserve the grape’s aromatic character and natural freshness.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe 2025 grapes were harvested at night to keep things fresh, then gently pressed and fermented at around 15°C in temperature-controlled stainless-steel tanks.
