His philosophy is to releases his bottles at their peak - perfectly ready for you to drink - and he make his canny cuvées using the most natural methods he can;
The Chardonnay grapes come from marl and and limestone organic plots (and a few biodynamic ones too) and having been hand picked the whole bunches are then crushed and the juice is fermented using natural yeasts. 10 months spent in used oak barrels adds the finish touch. Uncork and enjoy... bon!
As Pascal states himself, this wine is about about striking a balance in both the vineyard, winery and the glass, 'To the palate, an aromatic wine, fine but not light, full-bodied but not heavy, smooth and firm, dry and tender, rounded and rather intense, little structure but persistent.'
