This is a supremely special Sherry for PX fans - taken from a 200 year old solera, aged for 5 years and absolutely packed with complex, rich flavours. And yet there's an underlying freshness along with the expected sweetness, so it's not in the slightest bit cloying or sickly like 'el cheapo' supermarket Sherry can be.

Diatomists encapsulate the exciting new rebel alliance of winemakers in Jerez who shun the common idea that Sherry's identity is determined only in the winery and are fighting to put the soil and the fruit back in the spotlight, producing wines that clearly reflect the vines’ terroir as well as the solera in which it matured.

The Diatomists work to showcase these wines and indie producers by picking specific vineyards (pagos) and barrels (botas) and releasing them as super limited edition bottlings. They only work with growers who respect the land and work in more time honoured and lower intervention ways, so expect the sherry to be untamed and unfiltered.

All the wines are bottled in 37.5cl size as Antonio from Diatomists says it's the perfect size to finish a bottle while it's still fresh but also the ideal amount of Sherry for one person to polish off in a single sitting. Challenge accepted!

Diatomist is the name given to one who masters the art of diatom arrangement. Diatoms are single cell algae that create complex glass shells around themselves. 5 million years ago Jerez was under water which explains the unique and exceptional soil rich in diatom fossils.

These hidden microscopic marvels are essential for the vines to thrive in a hot climate with dry summers and sporadic heavy rainfall. The soils’ porosity locks in the moisture providing essential water reserves for the vines to thrive during the long and sunny growing season. In fact, the quality of the soil can be quantified by its diatoms.
